So I turned on the weather channel this morning and they so nonchalantly mentioned that it was currently 12 degrees outside. Growing up in Florida, I thought this was some kind of cruel joke, however; as I stepped outside I realized it was actually 12 degrees! This cold weather is really causing me to overindulge on warm winter comfort foods, such as muffins, soups and breads. Lately I seem to have taken a liking to soda bread, which has been good for my taste buds but bad for my waist line! Since I already make calorie conscious beverage choices by opting for diet soda, I figured I should opt for "diet" versions of my favorite foods as well. So, I modified the current soda bread recipe I have been using in to a "diet" soda bread recipe, substituting low calorie and more healthful choices for higher calorie counterparts. It tastes really good and my thighs are thanking me!
"Diet" Soda Bread
Ingredients:
3 cups wheat flour (substituted for all purpose flour)
1 tablespoon baking powder
1/3 cup low calorie sweetener (substituted for sugar)
1 teaspoon salt
1 teaspoon baking soda
2 egg whites (substituted for 1 egg)
2 cups buttermilk
1/4 cup margarine, melted (substituted for butter)
Directions
Preheat oven to 325 degrees. Spray 9x5 inch loaf pan with Olive Oil cooking spray.
Combine flour, baking powder, low calorie sweetener, salt and baking soda. Blend egg whites and buttermilk together, and add to the flour mixture. Mix until moistened. Stir in margarine. Pour into prepared pan.
Bake for 65 to 70 minutes, or until a toothpick or knife inserted in the bread comes out clean.
