Happy Father's Day!

Unfortunately, I haven't lived in the same state as my parents in eight years. So every time a birthday or Mother's Day and Father's Day rolls around, I have to settle for phone calls and shipped gifts instead of spending time with them. Back when I still lived in Chicago, though, I would usually find a cool little gift of the book/music/movie/clothing variety, then pick up a six-pack of quality beer and head to my parents house for a cook-out every Father's Day. See, my dad LOVES to grill. Give the man a nice pilsner and put him in front of a barbecue grill and he's in heaven. So while he would never let us take over grilling duties, he would let us make the side dishes and desserts. Those were the days! Anyway, wish I was there today, whipping up some potato salad and baking a delicious dessert. Instead, I'm sitting at home, watching Empire Strikes Back and drinking a Sprite Zero. Life could be much worse, I know, but there are times that I really miss having family close by.

Speaking of family, if your dad likes cheesecake, try this recipe. It's sweetened with Minute Maid and tastes wonderful!
